
Last Night Clint and I threw a fiesta to celebrate our new wedding/new apartment with our friends in Ohio who we missed at our wedding. We had so much fun! We had a great turn out and as Stephen said, "Wow there is a perfect mix of married, single, mormon and non-mormons, way to bridge the gap!" I took that to mean that our party was a sucess :) We made cafe-rio pork and chicken taco's, yum yum ( Recipe to follow) and I even made these cute little bride and groom pinatas. It was so good to see all of our friends, and to throw our first party together. I think everyone had a good time!

Let me introduce you to the Pinata Allreds. Aren't they cute? I had so much fun making them, I just love to make things, have I mentioned? Unfortunately I accidentally erased the picture of them while they were still intact, hence the fracture on my mid section. Ouch!

I think the pinata was the most fun part of our party! Our new neighbor, Amanda got to do the honors by taking at wack at the Mr. and Mrs. Her first pinata experience! I think she liked it. Rest in Peace Pinata Allreds! Thanks everyone for coming, we had a really fun time.
CAFE RIO STYLE PORK
this turned out really well, it tastes a lot like the real thing. Everyone raved. Thanks Sarah for the yummy recipe and tips :)
1 pork tenderloin ( 3-5 lbs)
20 oz of Coke
1 Cup brown sugar
1 bottle taco sauce (depending on how spice you like you pick the mild, med or hot) I used med.
1 T cumin
Garlic, salt and pepper
Put the pork tenderloin in the crock pot with a little water, maybe a 1/2 a cup, 2 T garlic and salt and pepper. Cook on low for about 5 hours.
After that is done, boil the coke, brown sugar, taco sauce and cumin in a sauce pan. Shred pork and add sauce, let it marinate on low for anywhere from 5 to 8 hours.
TOMATILLO DRESSING
1 pkg Hidden Valley Buttermilk Ranch Dressing mix
1 C buttermilk
1 C Mayo
1 to 2 tomatillos
1/2 to 1 clove garlic, minced
1/2 to 1/3 bunch cilantro, chopped
1/2 t lime juice
1/2 to 1 small jalapeno, seeds removed!
1 pkg Hidden Valley Buttermilk Ranch Dressing mix
1 C buttermilk
1 C Mayo
1 to 2 tomatillos
1/2 to 1 clove garlic, minced
1/2 to 1/3 bunch cilantro, chopped
1/2 t lime juice
1/2 to 1 small jalapeno, seeds removed!
Put everything in a blender and mix until smooth.
